Ingredients
These are the best keto dinner rolls you will make because they are tasty and have the perfect texture too!
I made them with a basic fathead dough recipe. It’s an easy way to make keto bread and usually involves a combination of cream cheese, mozzarella cheese, and almond flour.

Cream cheese
Use softened cream cheese, which gives the rolls lots of protein and healthy fats. It also makes the rolls softer with a texture that holds together really well.
Mozzarella cheese
This shredded cheese has a very mild flavor that won’t stand out too much. It’s also a soft cheese that melts really well.
Sour cream
Use full-fat sour cream to give you rolls that aren’t too dry.
Almond flour
This is the best kind of flour to use in fathead dough. Remember to use almond flour, not almond meal. If you use almond meal, the rolls will come out with a grainy texture.
Baking powder
Always use baking powder if you want what you are baking to have lift or airiness.
Eggs
The eggs in this recipe act like an emulsifier, helping all the ingredients blend and hold together.
Optionally, you can mix some extra eggs together to make an egg wash for the outside of the rolls as well.
Xanthan gum
Add a pinch of xanthan gum to help the almond flour and everything else stick together. Xanthan gum is often used in gluten-free recipes to mimic the effects of gluten.
Butter
Save some butter to brush on top of your rolls when they are just hot out of the oven.
Tips
- Microwave in short bursts. When you melt the cream cheese and mozzarella, do it in short bursts, stirring really well in between each time.
- Use an electric mixer. You can certainly use a wooden spoon, but it will be a lot quicker and easier if you use an electric mixer.
- Add melted butter. Use a pastry brush to brush melted butter on top of your rolls instead of spreading with a stick of butter.

Melt mozzarella and cream cheese
Melt these two types of cheese together in the microwave. Warm them up in the microwave at 30-second intervals. Stir it really well in between intervals.
Combine all ingredients
Add everything together in a mixing bowl. Use an electric mixer to blend it all until it forms a dough.
Form into rolls
Get your hands slightly wet for this step because it will prevent the dough from sticking to your hands.
Form the dough into 8 rolls and place them on a sheet of parchment paper on top of a baking sheet.
Bake keto dinner rolls
Now all you have to do is bake the rolls until they are golden brown. Right after they come out of the oven, brush them with butter.

Variations
There are a lot of different ways to make these dinner rolls. I kept my keto rolls recipe basic so that you can make your own variations and twists to it.
One of the easiest ways to change it up is to brush some minced garlic or garlic powder on top.
Or, sprinkle Everything Bagel seasoning on top. It has a combination of salt, sesame seeds, and poppy seeds in it!
If you want the rolls to have a touch of sweetness, add a little bit of your favorite sugar substitute to the dough.
FAQs
Even though you might see some recipes for low-carb bread that use coconut flour, I do not suggest trying to make a 1:1 replacement in these rolls. Coconut flour absorbs moisture differently and it will change the texture.
No, you cannot use baking soda as a 1:1 replacement for baking powder in these rolls. If you do, you’ll need to add an acid to the recipe so that it creates the ideal chemical reaction.
The best way to store these rolls is in an airtight container or food storage bag. It’s important to keep the air off of them. Store them at room temperature. I like to keep mine on my countertop.
Yes, these rolls are freezer-friendly. Store them in an airtight freezer-safe bag or container. They will stay fresh in the freezer for up to 6 months.
