Ingredients
- 2 wholemeal Mountain Bread wrap, chopped into “chip” sized pieces (50 grams)
- 2 cups hummus (500 grams)
- 1/2 cup kalamata olives, pitted & chopped (90 grams)
- 1/2 cup semi-dried tomatoes, chopped (120 grams)
- 3/4 cup reduced-fat feta (180 grams)
- 100 gram tinned chickpeas, rinsed & drained
- 1 punnet cherry tomatoes, chopped (250 grams)
- 1 Lebanese cucumber, half sliced, half chopped (200 grams)
- 1 lemon, sliced (100 grams)
- 4 medium carrot, peeled & cut into sticks (280 grams)
- Salt and pepper
- 1 tsp extra virgin olive oil (5 mls)
- 1 tbsp optional Dukkah (a Middle Eastern seed & spice mix) (15 grams)

Instructions

Preheat the oven to 180C and line a baking tray with baking paper.

Place the chopped mountain bread in an even layer on the baking tray and bake
for 1-2 minutes to toast the wrap, turning half way through. Remove from the
oven and set aside to allow it to cool. -
Prepare the serving board, by covering 80% with baking paper.

Spread the baking paper evenly with the hummus, then top with the olives and
semi dried tomatoes. -
Cube the feta, reserving a small amount for garnishing, then sprinkle the feta
cubes over the board.

Sprinkle over the chickpeas, cherry tomatoes and chopped cucumber.

Arrange lemon, carrot and cucumber slices around the board.

Season with salt and pepper, garnish with (optional) Dukkah, remaining feta,
crumbled over the top, then drizzle with olive oil to serve.
